30 Day Challenge

Some of the girls at the gym are on board for a 30 day paleo-esque challenge. I'm tagging along for a number of reasons:
  • I've had too many holiday treats and it's time to dial in
  • I really like the gals at the gym
  • I love a good challenge
  • Like most of us, I have a yearning to be included :-)
So the deal is pretty straight forward, we eat clean for 30 days - the big keys being no grains, sugar (including natural sources like honey), and only dairy if you find it agrees with you. In my case, I'll continue with a low histamine version of course. On that note, my skin's been quite good since my strict 30 days. An update on that front still to come.

So we took measurements and photos at the gym today and we kick off on Monday. (We couldn't very well officially start on New Year's Eve, now c'mon.) And if all turns out well, I may even post before and after pictures... though I reserve the right to change my mind.

Almond Apple Muffins

We had friends over for brunch today, so I made muffins for the occasion. Every time I make almond meal muffins they're a bit different. Today they turned out particularly well, so thought I'd share. Not too sweet.


  • 4 eggs 
  • 2 t vanilla extract  
  • 1/4 C unsweetened applesauce 
  • 1 t lemon extract 
  • 1/3 C coconut oil 
  • 2 T honey 
  • 3 C almond meal 
  • 1/4 C ground flaxseed 
  • 1 t baking soda 
  • 1/2 apple cut into small cubes


  • Beat the eggs in a bowl with the extracts, applesauce, honey and coconut oil. Mix well. 
  • Add the almond meal, flaxseed and baking soda and mix well.  
  • Add the cubed apple and mix gently.  
  • Bake in mini muffin pans for approx. 20 mins at 350 degrees. Longer if making full size muffins (check with a toothpick). 

Made 20 mini muffins.

Wrapping up 30 days hard core low histamine

[Note: This original post is from November 2011, early in my exploration of histamine intolerance. Looking back, there are a few foods in this food diary that probably weren't as low histamine as I thought, foods that could be a bother to others. Nonetheless, I was able to achieve relief and some good healing from this stretch. I encourage readers to catch up with my eczema situation in more recent posts. - Sarah, March 2014]

Today is day 30 of my 30 day commitment to an extreme low histamine paleo diet. Overall, there were more ups than downs. A small to medium flare up here and there, but I've learned/confirmed a few things...

1. Homemade chips fried in coconut oil don't seem to agree with the skin. I've had enough morning-after mild flare ups to admit there's likely a connection. I hope this isn't a sign of a larger coconut issue, but I think keeping the coconut oil-drenched chips to a minimum will be wise. Note: These chips taste fantastic. I have them down to a science to a point where my celiac-partially-paleo-but-still-eats-sweets husband asked where (i.e. what bag) they came from. Taste like the "real" thing but better. An infrequent, possibly baked next time, treat they shall be.

2. Boiled eggs left in the fridge - being leftover protein - is a histamine mistake. Duh. Noted.

3. Stress and sleep are important factors. Early in my quest, I had a particularly stress-filled span of 20-30 minutes at work under a deadline. I ripped at my hand/arm for the duration of this time. I suspect food was still a factor (boiled egg perhaps), but stress seemed to throw me over the bend. Note: try to chill out.

4. Although I don't usually overeat on protein, it probably makes up a larger proportion of my diet than the histamine gods would recommend. Fair game from a paleo perspective, but not recommended in terms of histamine intolerance. I don't plan on fundamentally altering my macronutrient intake, but something to be aware of. Will balance my meat out with plenty of veggies.

5. Nobody beats Mom. My mom was over for the Remembrance Day long weekend and we had a great time. As I've mentioned before, she discovered the histamine intolerance in herself before I'd even started having symptoms (post-paleo). She's a dietitian, and all 'round fun gal and I love her. The observation on the leftover boiled eggs is just one example or her valuable insight on all things good health. She's my number one health-related confidante.

Anyhow, I suggested in an earlier post I'd share my 30 day food log. For what it's worth, here it is. You'll note a few references to skin condition here and there, though I haven't recorded it in any great scientific manner. I welcome thoughts, observations.

Why didn't I think of that?

My mom is visiting for the long weekend, which is a great treat. We talk a lot of nutrition when together, which often revolves around the whole histamine thing. It's because of her that I was able to determine what the deal with my skin was.

Coincidentally, I had a moderate skin flare up today, of which she was a witness. She asked an excellent question: "do you think it's the hard boiled eggs?" Well how about that. How could I have overlooked something so seemingly obvious? I've been boiling eggs and putting them in the fridge for Molly snacks and for simple convenient protein on the run. Hello?! Protein + cooked + leftover = histamine overload. I can't believe it didn't think of that.

Taken this morning mid flare up. Please excuse bed head. And the grimace. Instead, notice unsightly red blotches.

In comparison to recent days, this was not good.

I later looked back over my food log (which I'll post when my 30 days of hard core low histamine are over) and sure enough, I've been eating an increasing number of (leftover) boiled eggs in recent days. In fact, there seems to be a trend where days I've had boiled eggs are also days (or followed by days) when I've recorded skin issues (although on the whole, I've been decent).

This may contribute to my frustration and wishy-washiness when it comes to eggs. Some days I'm sure they're fine, but other times I have to wonder. Which has led to a lot of flip flopping from no eggs to yes eggs. It's not the eggs themselves - which when cooked are fine - simply the eating of eggs that have been leftover. Of course!

So to finish out my 30 days (today is day 22), I will not be eating any of Molly's refrigerated boiled eggs. We'll see if it makes any difference in the home stretch.

I'm still debating what food to introduce first when the time comes... Maybe almonds. I haven't had them in so long, but I do enjoy them. They came up in that allergy test a while back, but I'm convinced it was due to the fact that my diet at the time was probably 40% almonds/almond products...

Mini Molly Blueberry Muffins

Soon-to-be 17-month-old Molly is already starting to notice that all the other kiddies at daycare are eating Cheerios and the like - and she wants some. I broke down the other day and picked up some Whole O's, a gluten-free organic alternative to Cheerios. She has a box at daycare now, so she doesn't try to strong arm the other kids out of their gluten-y snacks.

Although I'd prefer Molly stick to her assorted paleo-friendly snacks, I've decided to give a little here and there. I know she eats very well overall and I'm not going to let the odd handful of O's get me too down. However, this has encouraged me to start expanding my paleo food/snack repertoire with Molly in mind. And so, I discovered a good-looking muffin recipe by Paleoiscious. I simply swapped out the honey for applesauce and voila. I also meant to add some ground flaxseeds, but forgot. Next time.

Heading to the oven.

  • 3 C almond meal
  • 4 eggs
  • 2 t vanilla extract 
  • 1/4 C unsweetened applesauce
  • 3 T lemon juice
  • 2 C blueberries
  • 1/3 C coconut oil
  • 1 t baking soda
  • Beat the eggs in a bowl with the vanilla extract, applesauce, lemon juice and coconut oil. Mix well. 
  • Add the almond meal and baking soda and mix well. 
  • Add the blueberries and mix gently. 
  • Bake in mini muffin pans for approx. 20 mins at 350 degrees. Longer if making full size muffins (check with a toothpick).

Made 24 mini muffins.

I could've filled the tray a little less and made more muffins.

Aside from a significant flare up on day 3, I've only had mild to moderate itching here and there. Although it's been a frustrating journey, I daresay today things look like they might be getting under control (though usually when I think that things take a turn somehow).

One of the places my mind wanders these days is to what I will introduce first, after these 30 days. Ideas?

Coconut Paleo Bread

I don't consider myself a bread person, but every now and again I admit to a small hankering for an edible vessel for getting butter, nut butter, etc. into my mouth. I can across this simplest of simple recipes the other day which was just too easy not to try. It's from a neat little site called chocolate & carrots.


  • 1 C coconut flour
  • 1/4 C coconut milk
  • 1/2 C coconut oil (or unsalted softened butter)
  • 6 eggs, beaten
  • 1/2 t salt

  •  Preheat the oven to 350°
  • Mix all ingredients together
  • Bake for 45 minutes or until a toothpick comes out clean
I like this kind of simple, base recipe (not to mention low histamine). It'll be easy to expand/adapt by adding just about anything... ground flax seed, rosemary, honey, who knows. 

Not too bad toasted and slathered in butter.

Enough is enough

After a few recent skin flare-ups, I've decided to dial the low histamine thing up a notch. Although I admit the low histamine diet has improved my skin overall, I still can't help but feel my skin should be better than it is. This is very frustrating.

So, I've decided to commit to my own short list of foods that I will eat - and only eat - for the next 30 days. A more extreme Whole30 of sorts. Despite being quite disciplined with my eating (if I do say so), I have been turning to a few "treats" of late. These "extras" include cottage cheese, nuts, Jennie's Macaroons, and sweet potato chips. None of these things are actually in the histamine no-go category, but I have reason to wonder if they aren't hampering my progress.

And so, as of Saturday, October 22, I am only eating from the following list of foods. That's it. Nothing else. No exceptions. (I have to do it, since I've now declared it to the Internet.)



  • Beef
  • Chicken (less so)
  • Pork
  • Eggs (2 max/day) 


  • Coconut oil/milk/flakes
  • Olive oil
  • Butter


  • Broccoli
  • Cauliflower
  • Brussels sprouts
  • Sweet potato
  • Turnip

  • Carrots 
  • Parsnips
  • Asparagus
  • Apples

Note: Other veggies permitted, except known histamine-generators (spinach, pumpkin, eggplant, tomato in all its delicious forms, sauerkraut)

On day three of hard-core low histamine, I was greeted with a fairly severe morning flare -up. I have reason to believe it may have been stress induced.

So I'm keeping a record of my skin condition, as well as a food log (which is comprised of the foods listed see above).  I'll update here as often as manageable, including pictures, my food log perhaps and my overall progress. My hope is that after 30 days of (*sigh* even more) strictly eating a low histamine diet I'll have eliminated virtually all of the eczema. Wish me luck.

Citrus Pound Cake

I came across a version of this tasty little cake recipe here. I've removed the cinnamon (for histamine reasons), plus made a couple other small adjustments. I've made it a few times now - most recently for a bake sale. At which is sold early I might add :-)

  • 6 eggs
  • 1 C coconut milk
  • 1/2 C honey
  • 1 t vanilla extract
  • 1/4 t coconut extract
  • 1/4 t orange extract
  • 1 C coconut flour
  • 1/4 t baking soda
  • 1/4 t cinnamon
  • 1/8 t sea salt
  • Coconut oil

  •  Preheat oven to 350 degrees. 
  • Beat the eggs with the coconut milk, honey and extracts, until smooth. 
  • Add the coconut flour, baking soda and salt. Mix until a smooth batter forms.
  • Grease a loaf pan with coconut oil, and sprinkle with some coconut flour to lightly coat pan. 
  • Pour batter into the loaf pan. 
  • Bake for about about 60 minutes, until pound cake a toothpick inserted into the center comes out clean.
  • Allow the pound cake to cool before removing it from the pan.

What does a low-histamine-paleo diet look like?

My last post was a walk down food memory lane where I recalled the many common paleo foods I once loved with reckless abandon. Such a post might leave you wondering "what exactly can she eat?" Below are some of the low histamine dishes I enjoy these days...

Breakfast smoothie: blueberries, coconut milk, hemp protein, omega 3 oil, multi-vitamin, ground flax seed.
Coffee with whipping cream.
Burger and butternut squash.

Flank steak, parsnips, carrots and brussel sprouts.

Pork chop, cauli-carrot puree.
Roast pork.

Burger, sweet potato.
Burger, carrots, broccoli.
Roast pork, broccoli, yellow squash, brussel sprouts.
Funny thing is, even with all these histamine-related restrictions and skin troubles, I'm still committed to the paleo lifestyle (though occasionally when I'm having a skin flare-up I wonder why). The food above may seem rather bland and/or repetitive, but I say delicious.

Oh to be straight-up paleo...

I uploaded a few pics from my iPhone tonight and came across a number of old pre-low-histamine-paleo food pics. It had me mourning the simple days of just eating a standard, delicious, care-free paleo way. Below is a walk down food memory lane...
I love lettuce wraps - so crisp and delicious! Can no longer have the mayo, leftover chicken or cheddar cheese. Or avocado.

Yummy - and easy - coconut shrimp soup from Mark Sisson's Quick and Easy Meals. Can no longer eat shrimp.

I believe I can have these cookies, but would have to sub out the dark chocolate chips for carob or simply go chip-less. You guessed it, cocoa is off limits when histamine intolerant.

Oh the glorious meat sauces. Loaded with histamine-rich tomatoes.

Well... I could still have the burger and the lettuce. No salsa or avocado.

Covering all the bases here. But today can have nothing from this place (leftover chicken, avocado, or strawberries).

Broccoli I still enjoy by the handfuls. Coconut crusted salmon, however, is on the banned list. (Perhaps if I caught the salmon myself and threw it directly on the grill in my boat I'd be okay...)

Sweet, sweet Bluefield bacon. How I miss thee.

Meat - check; salsa - check; avocado - check; spinach - check.  Another can't-have-anything-on-this-plate example (except the ground beef, if it were freshly cooked).

Another old fav from Bluefield - the healthy all natural, organic, local, all-beef hot dog. Only the lettuce here that remains on the roster.

Only the scallops here that pose a problem. And that reminds me I haven't done cauli-rice in a while...

There is almost nothing about your average (or non-average) pizza I can now ingest without inviting symptoms.

I believe this was a hotel breakfast of  bacon and eggs. I continue to go back and forth on the eggs... they should be okay from a histamine perspective, but not sure I can fully trust them. Bacon is definitely out.

Zucchini is all good, but not with the sausage, spinach and tomato its swimming with.

Wow - yet another full plate of histamine. Is it any wonder paleo pushed me over the edge?

This masterpiece came from Riverview Market. Basically sausage in a tidy bacon-coated package. Quite the treat. Quite the histamine.

Forgive me for whining. I promise to turn this mourning around into new and innovative low histamine, but paleo food ideas. But can you really blame me? Almost all of the paleo foods I've so enjoyed since February are high in histamine. Despite the increased energy, improved CrossFit performance, baby-weight-and-then-some weight loss, I can't take the skin issues. On the upside, I'm sticking with the paleo way of eating. Sure, it's a pared down approach, but I'm still better off for it. Even with these restrictions, I have no intentions of returning to grains, processed foods, etc.  I continue to hold out that eventually I'll clear my skin completely - to a point where I can slowly and gradually re-introduce some of these foods. With my eyes wide open (not watery and puffy).

Since going low histamine over a month ago, my eczema has been steadily improving. Or, it had been. Over the last week or two, progress seemed to reverse and I developed additional rash inside my elbow, coupled with a few flare-ups.

At my wits end, I considered my diet of late. It's been very good - lots of animal protein and vegetables, minimal fruit, nuts and nut butters, coconut and olive oils. All paleo and no high histamine foods. So I came to a bit of a theory, based on the following considerations:

  • Due to its histamine, I was no longer taking fish oil
  • Likewise, no fish or seafood of any kind
  • I was probably eating too many nuts

My theory is that an omega 3-6 fatty acid imbalance was causing my recent inflammation = eczema. Coincidentally, I've been reading Robb Wolf's book The Paleo Solution, which also speaks to this common imbalance and its impact on the body. So this past week or so I've cut back on the nuts/nut butters and started taking omega 3 oil daily (which was prescribed by my naturopath a few weeks back, but I hadn't gotten around to taking it yet). Here's the result:

So on the upside, my skin is continuing in the right direction and hopefully soon I will be all cleared up. Also on the positive is how interesting it is to be so much more in tune with my body and how I react to food. On the downside, balancing omegas is yet another layer of complexity to my current diet. I'm better for it, but I sure do miss the oh-so-simple days of regular 'ol paleo eating. I miss avocado, bacon, tomatoes in all their delicious forms, chocolate (cocoa), condiments of all sorts, etc. but evidently, I'm better off without them. In the grand scheme, a small price to pay.
